Tasty Banana and Oat Muffin Recipe


Indulge in this guilt-free banana muffin recipe by our dietitian, Kristen Varnis. These delightful muffins are packed with wholesome ingredients like ripe bananas, wholemeal flour, and antioxidant-rich blueberries. They are the perfect balance of flavour and nutrition to nourish your body.

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/3 cup extra virgin olive oil
  • 1/2 cup maple syrup
  • 3 ripe bananas, mashed
  • 1/4 cup milk
  • 1 teaspoon baking soda
  • 2 eggs
  • 1/2 teaspoon cinnamon
  • 1 3/4 cups wholemeal plain flour
  • 1/3 cup rolled oats
  • 1 cup blueberries or raspberries (fresh or frozen)

  1. Preheat oven to 165C. Spray a muffin tray with nonstick spray or line it with cupcake liners.
  2. Combine flour and oats in a bowl, then fold the blueberries.
  3. In a large bowl, whisk together olive oil and maple syrup. Add eggs and whisk well.
  4. Mix in mashed bananas and milk, followed by baking soda, vanilla extract, salt, and cinnamon.
  5. Divide the batter evenly between the muffin cups, filling each cup about two-thirds full. Sprinkle the tops of the muffins with a small amount of oats (1tbsp total).
  6. Remove muffins from the tin and cool on a cooling rack for 5 minutes.
  7. Bake the muffins for 22-25 minutes, or until a toothpick inserted into one comes out clean.
